Omelet with Turkey

4 Egg whites
2 oz Turkey
¼ Cup chopped onion
2 Tablespoon parsley
1 Tablespoon olive oil
Salt and pepper to taste

Directions:
In a Small bowl mix all ingredients together. Add oil to the non-stick skillet over medium-high heat. Pour the mixture in pan and slowly Cook the omelet. When bottom of omelet is completely cooked, fold over omelet and cook for 5 minute.

Egg Pancakes

1 Cup Oat Meal
4 Egg Whites
½ Cup fat-free Cottage Cheese
½ Cup Skim Milk
1 Tablespoon Pancake Mix
1 Tablespoon Cinnamon
2 Tablespoons raisins
1 Tablespoon Peanut Butter or Almond Butter


Blend it up and it's ready to cook!
Directions:

In a blender, put the oatmeal on high speed for three minute to make flour. Combine all ingredients and stir until mixed. If the batter is too thick, add a small amount of skim milk to thin it out. Cook the pancakes in a non-stick skillet with cooking spray. Pour mixture into round pancakes and cook about 40-50 seconds on each side or until golden brown. Serve hot, topped with sliced fresh strawberries, Peanut butter and sugar free syrup or vanilla non-fat yogurt. Yield about 6 pancakes.
